last time at the cottage I discovered that mice had chewed up several wires and the headlights don't work. Don't want to buy the whole wiring harness so I would like to just replace the chewed up wire. What is the wire size or gauge?

I'm not sure what size is in there, but I wouldn't go any smaller than 16ga. Typically, I'd use 14ga for lighting. Remember, you can never go wrong using a larger gauge.
Also, this might be obvious, but don't use solid wire. Use automotive quality stranded wire and silicone seal any splices to prevent corrosion.
14-16 gauge wire should work just fine for the stock lights. Just make sure you waterproof all of your connections. Another thing to do is get some of the split wire loom and wrap over all your wiring to protect it, then wrap it with electrical tape that should keep the mice from chewing through the wiring.
